  • 1/2 cup rolled oats

  • 1/4 cup shredded coconut (unsweetened)

  • 1/4 cup flaxseed meal (optional for extra omega-3s)

Directions:

  1. In a mixing bowl, combine the peanut butter, rolled oats, shredded coconut, Happy Scratch powder, flaxseed meal (if using), and honey.

  2. Stir until everything is well combined. The mixture should be thick and sticky.

  3. Roll the mixture into small bite-sized balls (about 1 inch in diameter).

  4. Place the energy bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

  5. Once set, store them in an airtight container in the fridge for up to a week.
